Indian-Inspired Tofu for Lowering Cholesterol

A heart-healthy tofu recipe rich in soluble fiber, plant-based proteins, and healthy fats, perfect for lowering high cholesterol levels.

Ingredients

  • 1 block of firm tofu, cubed
  • 1 tablespoon coconut oil
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 teaspoon grated ginger
  • 1 teaspoon turmeric powder
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon chili powder
  • 1 can of diced tomatoes
  • 1 can of chickpeas, drained and rinsed
  • 1/2 cup coconut milk
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

Press the tofu to remove excess water, then cube it.
In a large skillet, heat coconut oil over medium heat.
Add onion, garlic, and ginger, sauté until fragrant.
Stir in turmeric, cumin, coriander, and chili powder.
Add diced tomatoes and chickpeas, simmer for 5 minutes.
Add tofu and coconut milk, simmer for another 10 minutes.
Season with salt and pepper.
Garnish with fresh cilantro before serving.
