A cholesterol-lowering Indian-inspired dish packed with heart-healthy ingredients.

Ingredients

  • 1 cup cooked brown rice
  • 1 can black beans, drained and rinsed
  • 1 cup diced tomatoes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp turmeric
  • 1 tsp cumin
  • 1 tsp coriander
  • 1/2 tsp cinnamon
  • 1/2 tsp cayenne pepper
  • 1/4 cup chopped cilantro
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

In a large pan, heat olive oil over medium heat.
Add onion and garlic, sauté until fragrant.
Stir in turmeric, cumin, coriander, cinnamon, and cayenne pepper.
Add black beans and diced tomatoes, cook for 10 minutes.
Fold in cooked brown rice, cook for another 5 minutes.
Season with salt and pepper, garnish with chopped cilantro.
