Indian-Inspired Chickpea Curry

A delicious and heart-healthy chickpea curry inspired by Indian cuisine, rich in soluble fiber, plant-based proteins, and healthy fats.
Ingredients
- 1 tbsp olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1-inch piece of ginger, grated
- 1 tsp cumin
- 1 tsp coriander
- 1 tsp turmeric
- 1/2 tsp cayenne pepper
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 can (14 oz) diced tomatoes
- 1 can (14 oz) coconut milk
- 2 cups spinach
- Salt and pepper, to taste
- Fresh cilantro, for garnish
Instructions
In a large skillet, heat olive oil over medium heat. Add onion, garlic, and ginger, and sauté until fragrant.
Add cumin, coriander, turmeric, and cayenne pepper to the skillet, and cook for another minute.
Stir in chickpeas, diced tomatoes, and coconut milk. Bring to a simmer and cook for 15 minutes.
Add spinach to the skillet and cook until wilted. Season with salt and pepper.
Serve the chickpea curry hot, garnished with fresh cilantro. Enjoy!
