French-inspired Vegan Ratatouille with Lentils

Ingredients

  • 1 eggplant, diced
  • 2 zucchinis, sliced
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 can of lentils, drained and rinsed
  • 1 can of diced tomatoes
  • 1 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

Preheat the oven to 400°F (200°C).
In a large baking dish, combine the diced eggplant, sliced zucchinis, chopped bell peppers, diced onion, minced garlic, lentils, and diced tomatoes.
Drizzle olive oil over the vegetables and lentils, then sprinkle with dried thyme, oregano, salt, and pepper. Toss to combine well.
Cover the baking dish with foil and bake in the preheated oven for 30 minutes.
Remove the foil and bake for an additional 10 minutes, or until the vegetables are tender.
Serve the ratatouille with lentils hot, garnished with fresh herbs if desired.
