Italian-Inspired Blmqly

A heart-healthy, cholesterol-lowering dish inspired by Italian flavors, rich in soluble fiber, plant-based proteins, and healthy fats.
Ingredients
- 1 cup quinoa
- 2 cups water
- 1 can chickpeas, drained and rinsed
- 1 cup cherry tomatoes, halved
- 1/2 cup cucumber, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 2 tbsp extra virgin olive oil
- 2 tbsp lemon juice
- 1 clove garlic, minced
- Salt and pepper to taste
Instructions
In a saucepan, bring the water to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15-20 minutes until the water is absorbed and the quinoa is cooked.
In a large mixing bowl, combine the cooked quinoa, chickpeas, cherry tomatoes, cucumber, red onion, and parsley.
In a small bowl, whisk together the olive oil, lemon juice, garlic, salt, and pepper to make the dressing.
Pour the dressing over the quinoa mixture and toss to combine evenly.
Chill in the refrigerator for at least 30 minutes before serving.
Serve the Blmqly salad cold as a light and refreshing meal or side dish.
