Italian-Inspired Vjag xm

A delicious and heart-healthy Italian-inspired dish designed to support a diet aimed at lowering high cholesterol.

Ingredients

  • 1 cup quinoa
  • 2 cups low-sodium vegetable broth
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup extra-virgin olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

In a medium saucepan, combine quinoa and vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until quinoa is cooked and liquid is absorbed.
In a large mixing bowl, combine cooked quinoa, chickpeas, cherry tomatoes, cucumber, red onion, and parsley.
In a small bowl, whisk together olive oil, lemon juice, oregano, salt, and pepper to make the dressing.
Pour the dressing over the quinoa mixture and toss to combine evenly.
Serve the Vjag xm salad in individual bowls and enjoy!
