Indian Spiced Chicken with Lentil Salad

A flavorful and heart-healthy Indian-inspired chicken dish served with a fiber-rich lentil salad.
Ingredients
- 4 boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1 tsp turmeric
- 1 tsp cumin
- 1 tsp coriander
- 1 tsp paprika
- 1/2 tsp cinnamon
- Salt and pepper to taste
- 1 cup dried green lentils
- 2 cups water
- 1 cucumber, diced
- 1 bell pepper, diced
- 1/4 cup chopped fresh cilantro
- Juice of 1 lemon
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
In a small bowl, mix together turmeric, cumin, coriander, paprika, cinnamon, salt, and pepper.
Rub the spice mixture onto both sides of the chicken breasts.
Heat olive oil in a skillet over medium heat. Add the chicken breasts and cook for 5-6 minutes per side or until cooked through.
In a separate pot, bring water to a boil and add the lentils. Reduce heat to low, cover, and simmer for 20-25 minutes or until lentils are tender.
In a large bowl, combine cooked lentils, cucumber, bell pepper, cilantro, lemon juice, olive oil, salt, and pepper. Mix well.
Serve the Indian spiced chicken with lentil salad on the side. Enjoy!
