A heart-healthy and cholesterol-lowering recipe inspired by American cuisine.
Ingredients
- 1 cup quinoa
- 2 cups water
- 1 can chickpeas, drained and rinsed
- 1 red bell pepper, diced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
In a medium saucepan, combine quinoa and water. Bring to a boil, then reduce heat, cover, and simmer for 15-20 minutes until quinoa is cooked.
In a large bowl, combine cooked quinoa, chickpeas, red bell pepper, cherry tomatoes, red onion, and parsley.
In a small bowl, whisk together olive oil, lemon juice, garlic powder, salt, and pepper.
Pour dressing over the quinoa salad and toss to combine.
Serve the salad chilled or at room temperature. Enjoy!
