Indian-Inspired High Fiber Chicken

A delicious Indian-inspired chicken dish packed with heart-healthy ingredients to support a diet aimed at lowering high cholesterol.
Ingredients
- 4 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tablespoon ginger, grated
- 1 teaspoon turmeric
- 1 teaspoon cumin
- 1 teaspoon coriander
- 1/2 teaspoon cinnamon
- 1/2 teaspoon paprika
- 1/4 teaspoon cayenne pepper
- 1 can (14 oz) diced tomatoes
- 1 can (14 oz) chickpeas, drained and rinsed
- 1 cup low-sodium chicken broth
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
In a large skillet, heat olive oil over medium heat.
Add onion, garlic, and ginger. Cook until softened, about 5 minutes.
Stir in turmeric, cumin, coriander, cinnamon, paprika, and cayenne pepper. Cook for 1 minute until fragrant.
Add diced tomatoes, chickpeas, and chicken broth. Bring to a simmer.
Season chicken breasts with salt and pepper, then add them to the skillet. Cover and cook for 15-20 minutes until chicken is cooked through.
Garnish with fresh cilantro before serving.
