Indian Spiced Carrot Curry

A flavorful and heart-healthy Indian-inspired carrot curry that supports a diet aimed at lowering high cholesterol.
Ingredients
- 1 tbsp coconut oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 1 tsp cumin seeds
- 1 tsp coriander powder
- 1/2 tsp turmeric powder
- 1/2 tsp cayenne pepper
- 1/2 tsp garam masala
- 4 large carrots, peeled and sliced
- 1 can (400g) diced tomatoes
- 1 can (400ml) coconut milk
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
In a large pan, heat coconut oil over medium heat.
Add cumin seeds and sauté until fragrant.
Add chopped onions, garlic, and ginger. Cook until onions are translucent.
Stir in coriander powder, turmeric, cayenne pepper, and garam masala. Cook for another minute.
Add sliced carrots, diced tomatoes, and coconut milk. Bring to a simmer and cook for 15-20 minutes until carrots are tender.
Season with salt and pepper to taste.
Garnish with fresh cilantro before serving.
