French-Inspired Chickpea Stew

A delicious and heart-healthy stew inspired by French cuisine, rich in soluble fiber, plant-based proteins, and healthy fats.

Ingredients

  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 red bell pepper, diced
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 can (14 oz) diced tomatoes
  • 2 cups vegetable broth
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Instructions

In a large pot, heat the olive oil over medium heat. Add the onion and garlic, and sauté until fragrant.
Add the carrots, celery, and red bell pepper to the pot. Cook for 5 minutes, stirring occasionally.
Stir in the chickpeas, diced tomatoes, vegetable broth, thyme, and rosemary. Season with salt and pepper.
Bring the stew to a boil, then reduce heat and simmer for 30 minutes, or until the vegetables are tender.
Taste and adjust seasoning if needed. Serve hot, garnished with fresh parsley.
