Soluble Fiber-Rich Kgdreitfoun

A delicious and heart-healthy Kgdreitfoun recipe rich in soluble fiber, plant-based proteins, and healthy fats.

Ingredients

  • 1 cup quinoa, rinsed
  • 2 cups vegetable broth
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup lemon juice
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1/4 cup toasted pumpkin seeds (optional)
  • 1/4 cup crumbled feta cheese (optional)

Instructions

In a medium saucepan, combine quinoa and vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until quinoa is cooked and liquid is absorbed.
In a large mixing bowl, combine cooked quinoa, chickpeas, cherry tomatoes, cucumber, red onion, and parsley.
In a small bowl, whisk together lemon juice, olive oil, salt, and pepper. Pour over the quinoa mixture and toss to combine.
Top with toasted pumpkin seeds and crumbled feta cheese, if desired.
