Asian-Inspired Soluble Fiber Chicken

A heart-healthy Asian-inspired chicken dish rich in soluble fiber, plant-based proteins, and healthy fats.
Ingredients
- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- 2 tablespoons low-sodium soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon honey or maple syrup
- 1 teaspoon sesame oil
- 2 cloves garlic, minced
- 1 tablespoon grated ginger
- 1 red bell pepper, sliced
- 1 cup snow peas
- 1 cup broccoli florets
- 1 tablespoon cornstarch
- 1/4 cup water
- Cooked brown rice or quinoa, for serving
Instructions
In a small bowl, whisk together soy sauce, rice vinegar, honey or maple syrup, sesame oil, garlic, and ginger.
Place chicken in a bowl and pour half of the sauce over it. Let marinate for at least 15 minutes.
In a separate bowl, mix cornstarch and water to create a slurry.
Heat a large skillet over medium-high heat. Add chicken and marinade, and cook until chicken is no longer pink.
Add bell pepper, snow peas, and broccoli to the skillet. Cook for another 3-4 minutes.
Pour the remaining sauce over the chicken and vegetables. Stir in the cornstarch slurry and cook until the sauce thickens.
Serve the Asian-inspired soluble fiber chicken over cooked brown rice or quinoa.
