Mexican-Inspired Soluble Fiber Chicken

A heart-healthy Mexican-inspired chicken recipe rich in soluble fiber, plant-based proteins, and healthy fats.
Ingredients
- 4 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 can black beans, rinsed and drained
- 1 can diced tomatoes
- 1 cup low-sodium chicken broth
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
In a large skillet, heat olive oil over medium heat.
Add onion, garlic, and red pepper. Saute until vegetables are tender.
Push vegetables to the side of the skillet and add chicken breasts. Cook until browned on both sides.
Stir in black beans, diced tomatoes, chicken broth, cumin, chili powder, salt, and pepper.
Cover and simmer for 20 minutes or until chicken is cooked through.
Garnish with fresh cilantro before serving.
