Mexican-Inspired Chicken

Ingredients
- 4 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1/2 teaspoon chili powder
- 1/2 teaspoon oregano
- Salt and pepper to taste
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 onion, sliced
- 1 can of black beans, drained and rinsed
- 1 cup cooked quinoa
- Fresh cilantro for garnish
Instructions
Preheat the oven to 375°F (190°C).
In a small bowl, mix together olive oil, cumin, paprika, garlic powder, chili powder, oregano, salt, and pepper.
Place the chicken breasts in a baking dish and rub the spice mixture all over them.
Arrange the sliced bell peppers, onion, and black beans around the chicken in the baking dish.
