Mediterranean Quinoa Salad with Lemon Herb Dressing

Ingredients

  • 1 cup quinoa, rinsed
  • 1 ¾ cups water
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • ½ red onion, finely chopped
  • 1 avocado, diced
  • ¼ cup fresh parsley, chopped
  • ¼ cup fresh mint, chopped
  • ¼ cup extra virgin olive oil
  • 2 tbsp fresh lemon juice
  • 1 garlic clove, minced
  • 1 tsp honey (or maple syrup for vegan option)
  • Salt and pepper to taste

Instructions

In a medium saucepan, combine quinoa and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes or until quinoa is cooked and water is absorbed. Fluff with a fork and let cool.
In a large mixing bowl, combine cooked quinoa, chickpeas, cucumber, bell pepper, cherry tomatoes, red onion, avocado, parsley, and mint.
In a small bowl, whisk together olive oil, lemon juice, garlic, honey, salt, and pepper to make the dressing.
Pour the dressing over the quinoa salad and toss to coat evenly.
