Mediterranean Chickpea Salad

A delicious and heart-healthy Mediterranean-inspired salad rich in soluble fiber, plant-based proteins, and healthy fats.

Ingredients

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/4 cup Kalamata olives, pitted and sliced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

In a large mixing bowl, combine the chickpeas, cherry tomatoes, cucumber, red onion, olives, and parsley.
In a small bowl, whisk together the olive oil, lemon juice, dried oregano, salt, and pepper.
Pour the dressing over the salad ingredients and toss to coat evenly.
Serve the Mediterranean Chickpea Salad chilled or at room temperature. Enjoy!
