Ingredients

  • 1 cup quinoa
  • 2 cups mixed vegetables (such as bell peppers, zucchini, and cherry tomatoes)
  • 2 tbsp olive oil
  • 1 tsp dried herbs (such as thyme or rosemary)
  • Salt and pepper to taste
  • 2 tbsp balsamic vinegar
  • 1 tbsp Dijon mustard
  • 1 clove garlic, minced
  • Fresh herbs for garnish (such as parsley or basil)

Instructions

Preheat the oven to 400°F (200°C).
Rinse the quinoa under cold water and cook according to package instructions.
In a bowl, toss the mixed vegetables with olive oil, dried herbs, salt, and pepper. Spread them out on a baking sheet in a single layer.
Roast the vegetables in the preheated oven for 20-25 minutes, or until they are tender and slightly caramelized.
In a small bowl, whisk together balsamic vinegar, Dijon mustard, minced garlic, salt, and pepper to make the dressing.
