A delicious and heart-healthy quinoa salad inspired by French cuisine, featuring roasted vegetables and a light vinaigrette dressing.
Ingredients
- 1 cup quinoa
- 2 cups mixed vegetables (such as bell peppers, zucchini, and cherry tomatoes)
- 2 tbsp olive oil
- 1 tsp dried herbs (such as thyme or rosemary)
- Salt and pepper to taste
- 2 tbsp balsamic vinegar
- 1 tbsp Dijon mustard
- 1 clove garlic, minced
- Fresh herbs for garnish (such as parsley or basil)
Instructions
Preheat the oven to 400°F (200°C).
Rinse the quinoa under cold water and cook according to package instructions.
In a bowl, toss the mixed vegetables with olive oil, dried herbs, salt, and pepper. Spread them out on a baking sheet in a single layer.
Roast the vegetables in the preheated oven for 20-25 minutes, or until they are tender and slightly caramelized.
