French Lentil Salad with Herbed Vinaigrette

Ingredients

  • 1 cup French green lentils
  • 2 cups water
  • 1/2 red onion, thinly sliced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions

In a medium saucepan, combine the French lentils and water. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until lentils are tender but still firm. Drain any excess water and let cool.
In a large bowl, combine the cooked lentils, red onion, cherry tomatoes, cucumber, parsley, and mint.
In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, salt, and pepper to make the vinaigrette.
Pour the vinaigrette over the salad ingredients and toss to combine.
Serve the French Lentil Salad at room temperature or chilled. Enjoy!
