Asian-Inspired Tofu and Vegetable Stir-Fry

A delicious and heart-healthy Asian-inspired tofu and vegetable stir-fry packed with fiber, plant-based proteins, and healthy fats to support a diet aimed at lowering high cholesterol.
Ingredients
- 1 block of firm tofu, pressed and cubed
- 1 tablespoon sesame oil
- 2 cloves garlic, minced
- 1 tablespoon ginger, minced
- 1 small onion, sliced
- 1 bell pepper, sliced
- 1 cup broccoli florets
- 1 cup snow peas
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon maple syrup
- 1 teaspoon cornstarch
- 1/4 cup water
- Sesame seeds and green onions for garnish
Instructions
In a large skillet or wok, heat sesame oil over medium heat.
Add garlic, ginger, and onion, and sauté until fragrant.
Add tofu cubes and cook until browned on all sides.
Add bell pepper, broccoli, and snow peas, and stir-fry for a few minutes until vegetables are tender-crisp.
In a small bowl, whisk together soy sauce, rice vinegar, maple syrup, cornstarch, and water.
Pour the sauce over the tofu and vegetables, and stir well to coat.
Cook for another 2-3 minutes until the sauce has thickened.
Garnish with sesame seeds and sliced green onions before serving.
