French-Inspired Mis Tvajatvx

A heart-healthy, cholesterol-lowering recipe inspired by French cuisine, rich in soluble fiber, plant-based proteins, and healthy fats.
Ingredients
- 1 cup lentils, rinsed and drained
- 2 cups vegetable broth
- 1 onion, diced
- 2 cloves garlic, minced
- 1 carrot, diced
- 1 celery stalk, diced
- 1 zucchini, diced
- 1 can diced tomatoes
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper to taste
- 2 tbsp olive oil
- Fresh parsley for garnish
Instructions
In a large pot, heat olive oil over medium heat. Add onions and garlic, and sauté until fragrant.
Add carrots, celery, and zucchini to the pot, and cook for 5 minutes.
Stir in lentils, vegetable broth, diced tomatoes, thyme, rosemary, salt, and pepper. Bring to a boil, then reduce heat and simmer for 25 minutes, or until lentils are tender.
Taste and adjust seasoning if needed. Serve hot, garnished with fresh parsley.
