Italian-Inspired Plant-Based O Yipk Pmknci

A heart-healthy Italian-inspired dish designed to support a diet aimed at lowering high cholesterol.

Ingredients

  • 1 cup whole grain pasta
  • 1 can chickpeas, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1/2 cup chopped fresh basil
  • 2 cloves garlic, minced
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste
  • 1/4 cup pine nuts, toasted

Instructions

Cook the pasta according to package instructions. Drain and set aside.
In a large skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant.
Add chickpeas to the skillet and cook until slightly crispy, about 5 minutes.
Add cherry tomatoes and basil to the skillet. Cook for another 2-3 minutes.
Season with salt and pepper to taste.
Add cooked pasta to the skillet and toss to combine.
Divide the pasta mixture into serving bowls. Top with toasted pine nuts.
Serve hot and enjoy!
