Mediterranean-Inspired Chickpea Salad

A delicious and heart-healthy salad packed with soluble fiber, plant-based proteins, and healthy fats to support a diet aimed at lowering high cholesterol.
Ingredients
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/4 cup red onion, finely chopped
- 1/4 cup Kalamata olives, sliced
- 1/4 cup fresh parsley, chopped
- 2 tbsp extra virgin olive oil
- 1 tbsp lemon juice
- 1 clove garlic, minced
- Salt and pepper to taste
Instructions
In a large mixing bowl, combine the chickpeas, cucumber, cherry tomatoes, red onion, olives, and parsley.
In a small bowl, whisk together the olive oil, lemon juice, garlic, salt, and pepper to create the dressing.
Pour the dressing over the salad and toss to combine.
