Mediterranean Veggie Delight

A delicious and heart-healthy Mediterranean-inspired vegetable dish to support a diet aimed at lowering high cholesterol.
Ingredients
- 1 eggplant, diced
- 1 zucchini, sliced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 red onion, sliced
- 2 tbsp olive oil
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp garlic powder
- Salt and pepper to taste
Instructions
Preheat the oven to 400°F (200°C).
In a large bowl, toss together the diced eggplant, sliced zucchini, bell peppers, and onion with olive oil, oregano, basil, garlic powder, salt, and pepper until well coated.
Spread the vegetables in a single layer on a baking sheet lined with parchment paper.
Bake in the preheated oven for 20 minutes, or until the vegetables are tender and slightly browned.
