Fiber-Rich Veggie Delight

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 zucchini, diced
  • 1 cup cherry tomatoes, halved
  • 1 can chickpeas, drained and rinsed
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

In a large skillet, heat olive oil over medium heat.
Add the onion and garlic, and sauté until fragrant.
Add the bell pepper, zucchini, cherry tomatoes, and chickpeas. Cook until vegetables are tender.
Stir in cumin, paprika, salt, and pepper. Cook for another 2-3 minutes.
Remove from heat and garnish with fresh parsley.
Serve hot as a main course or side dish.
