Ze Opup - Fiber-Rich Italian Inspired Dish for Lowering Cholesterol

Ze Opup is a delicious and heart-healthy Italian inspired dish designed to support a diet aimed at lowering high cholesterol. This recipe is rich in soluble fiber, plant-based proteins, and healthy fats, while avoiding saturated fats, cholesterol, and refined sugars.
Ingredients
- 1 cup whole grain pasta
- 1 can of chickpeas, drained and rinsed
- 1 cup cherry tomatoes, halved
- 1/2 cup spinach, chopped
- 1/4 cup black olives, sliced
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions
Cook the pasta according to package instructions until al dente. Drain and set aside.
In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.
Add cherry tomatoes, chickpeas, spinach, black olives, and dried oregano to the skillet. Cook for 5-7 minutes until the tomatoes are softened.
Add the cooked pasta to the skillet and toss everything together. Season with salt and pepper to taste.
