Soluble Fiber-Rich K Epxi

A delicious and heart-healthy K Epxi recipe packed with soluble fiber, plant-based proteins, and healthy fats.
Ingredients
- 1 cup quinoa
- 2 cups water
- 1 tbsp olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 zucchini, diced
- 1 cup broccoli florets
- 1 cup cooked chickpeas
- 1 tsp turmeric
- 1 tsp cumin
- 1/2 tsp paprika
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
In a medium saucepan, combine quinoa and water. Bring to a boil, then reduce heat and simmer for 15 minutes or until quinoa is cooked.
In a large skillet, heat olive oil over medium heat. Add onion and garlic, sauté until fragrant.
Add bell pepper, zucchini, broccoli, and chickpeas to the skillet. Cook until vegetables are tender.
Stir in turmeric, cumin, paprika, salt, and pepper. Mix well to combine.
Add cooked quinoa to the skillet and toss to combine all ingredients.
Serve the K Epxi in bowls, garnish with fresh cilantro, and enjoy!
