Soluble Fiber-Packed Vegan Breakfast Bowl

Ingredients

  • 1 cup rolled oats
  • 2 cups unsweetened almond milk
  • 1 ripe banana, mashed
  • 1 tbsp chia seeds

  • 1/4 cup chopped walnuts
  • 1 tsp cinnamon
  • 1 tbsp maple syrup (optional)

Instructions

In a medium saucepan, combine rolled oats and almond milk. Bring to a simmer over medium heat.
Stir in mashed banana, chia seeds, flaxseeds, and cinnamon. Cook for 10-15 minutes, stirring occasionally, until oats are cooked and mixture has thickened.
