Ingredients
- 1 cup lentils, rinsed and drained
- 2 cups water
- 1 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp cumin seeds
- 1 tsp turmeric powder
- 1 tsp coriander powder
- 1 tsp garam masala
- 1 cup chopped spinach
- 1 cup diced tomatoes
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
In a large pot, combine lentils and water. Bring to a boil, then reduce heat and simmer for 20 minutes until lentils are tender.
In a separate pan, heat olive oil over medium heat. Add onions and garlic, sauté until translucent.
Add cumin seeds, turmeric, coriander, and garam masala to the pan. Stir well to combine.
Add chopped spinach and diced tomatoes to the pan. Cook for 5 minutes until vegetables are tender.
Add cooked lentils to the pan, season with salt and pepper. Stir to combine all ingredients.
Simmer for another 10 minutes to allow flavors to meld together.
Serve hot, garnished with fresh cilantro.
