Asian-Inspired Cholesterol-Lowering Soup

A delicious and heart-healthy soup inspired by Asian flavors, designed to support a diet aimed at lowering high cholesterol. This vegetarian soup is rich in soluble fiber, plant-based proteins, and healthy fats.
Ingredients
- 1 tbsp olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1-inch piece of ginger, grated
- 1 carrot, sliced
- 1 red bell pepper, diced
- 4 cups vegetable broth
- 1 can (14 oz) coconut milk
- 1 cup cooked lentils
- 1 cup chopped kale
- 2 tbsp soy sauce
- 1 tsp sriracha sauce
- Salt and pepper to taste
- Fresh cilantro and lime wedges for garnish
Instructions
In a large pot, heat olive oil over medium heat.
Add onion, garlic, and ginger. Saute until fragrant.
Add carrot and bell pepper. Cook for 5 minutes.
Pour in vegetable broth and coconut milk. Bring to a simmer.
Stir in lentils, kale, soy sauce, and sriracha. Season with salt and pepper.
Simmer for 15-20 minutes until vegetables are tender.
Serve hot, garnished with fresh cilantro and lime wedges.
