A delicious and heart-healthy Italian-inspired meal designed to support a diet aimed at lowering high cholesterol. This recipe is rich in soluble fiber, plant-based proteins, and healthy fats.
Ingredients
- 1 cup quinoa
- 1 can of chickpeas, drained and rinsed
- 1 red bell pepper, diced
- 1 zucchini, sliced
- 1 cup cherry tomatoes, halved
- 1/4 cup Kalamata olives, sliced
- 2 tbsp olive oil
- 1 lemon, juiced
- 2 cloves garlic, minced
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions
Cook quinoa according to package instructions.
In a large skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant.
Add bell pepper, zucchini, and cherry tomatoes to the skillet. Cook until vegetables are tender.
Add chickpeas, olives, lemon juice, and dried oregano to the skillet. Cook for another 5 minutes.
Season with salt and pepper to taste.
Serve the vegetable and chickpea mixture over cooked quinoa. Enjoy!
