Cheesy Veggie Quinoa Bites

Delicious and nutritious snack recipe packed with protein and veggies.
Ingredients
- 1 cup cooked quinoa
- 1/2 cup shredded cheddar cheese
- 1/2 cup diced bell peppers
- 1/4 cup diced red onion
- 2 eggs
- 1/4 cup breadcrumbs
- 1/2 tsp garlic powder
- 1/2 tsp paprika
- Salt and pepper to taste
Instructions
Preheat the oven to 350°F and grease a mini muffin tin.
In a large bowl, combine quinoa, cheddar cheese, bell peppers, red onion, eggs, breadcrumbs, garlic powder, paprika, salt, and pepper.
Scoop the mixture into the muffin tin, filling each cup to the top.
Bake for 20-25 minutes until the bites are set and golden brown.
Allow to cool slightly before removing from the tin. Enjoy warm or at room temperature.
