Grilled Chicken Breast with Quinoa and Steamed Broccoli

A delicious and healthy recipe for grilled chicken breast with quinoa and steamed broccoli.

Prep time: 10 minutes Cook time: 20 minutes Yields: 2 servings


  • 2 chicken breasts
  • 1 cup quinoa
  • 2 cups water
  • 2 cups broccoli florets
  • 1 tablespoon olive oil
  • Salt and pepper to taste


1. Preheat grill to medium-high heat.
2. Season chicken breasts with salt and pepper.
3. Grill chicken for 6-8 minutes per side, or until cooked through.
4. While chicken is grilling, rinse quinoa under cold water and drain.
5. In a medium saucepan, bring water to a boil. Add quinoa and reduce heat to low. Cover and simmer for 15 minutes, or until quinoa is tender and water is absorbed.
6. In a separate pot, steam broccoli florets until tender, about 5-7 minutes.
7. In a large bowl, combine cooked quinoa and steamed broccoli. Drizzle with olive oil and season with salt and pepper to taste.
8. Serve grilled chicken breast with quinoa and steamed broccoli on the side.
