Grilled Chicken Breast with Quinoa Pilaf and Roasted Brussels Sprouts

Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup quinoa
- 2 cups water
- 1 pound Brussels sprouts, halved
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
Instructions
Preheat grill to medium-high heat.
Season chicken breasts with salt, pepper, garlic powder, and paprika.
Grill chicken breasts for 6-8 minutes per side, or until cooked through.
While the chicken is grilling, cook quinoa according to package instructions.
In a separate baking sheet, toss Brussels sprouts with olive oil, salt, and pepper.
