Spinach and Egg Scramble with Whole Grain Toast

A healthy and delicious breakfast option packed with protein and fiber.
Ingredients
- 2 eggs
- 1 cup fresh spinach
- 1 slice whole grain toast
- 1 tsp olive oil
- Salt and pepper to taste
Instructions
In a bowl, whisk the eggs with salt and pepper.
Heat olive oil in a pan over medium heat.
Add the spinach to the pan and cook until wilted.
Pour the whisked eggs into the pan and scramble until cooked through.
Toast the whole grain bread.
Serve the scrambled eggs with spinach on top of the toast.
