Vegan Stir-Fried Tofu with Mixed Vegetables and Brown Rice

A delicious and nutritious vegan stir-fry recipe with tofu, mixed vegetables, and brown rice.

Ingredients

  • 1 block of firm tofu, drained and cubed
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon cornstarch
  • 1 tablespoon vegetable oil
  • 1 onion, sliced
  • 2 cloves of garlic, minced
  • 1 bell pepper, sliced
  • 1 cup broccoli florets
  • 1 cup sliced carrots
  • 1 cup snap peas
  • 1 cup cooked brown rice

Instructions

In a bowl, combine the cubed tofu, soy sauce, sesame oil, and cornstarch. Mix well to coat the tofu evenly.
Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the tofu and cook until golden brown and crispy, about 5 minutes. Remove the tofu from the skillet and set aside.
In the same skillet, add the sliced onion and minced garlic. Stir-fry for 2 minutes until fragrant.
Add the bell pepper, broccoli florets, sliced carrots, and snap peas to the skillet. Stir-fry for another 5 minutes until the vegetables are tender-crisp.
Return the tofu to the skillet and mix well with the vegetables.
Serve the stir-fried tofu and vegetables over cooked brown rice.
