Vegan Stir-Fry with Tofu and Vegetables over Brown Rice

A delicious and nutritious vegan stir-fry recipe with tofu, broccoli, bell peppers, and snap peas served over brown rice.

Ingredients

  • 1 block of firm tofu, cubed
  • 1 cup broccoli florets
  • 1 bell pepper, sliced
  • 1 cup snap peas
  • 2 cups cooked brown rice
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tsp ginger, minced
  • 1 clove garlic, minced
  • 1/2 tsp red pepper flakes
  • Salt and pepper to taste

Instructions

In a large skillet, heat sesame oil over medium heat.
Add tofu cubes and cook until golden brown, about 5 minutes.
Add broccoli, bell pepper, snap peas, ginger, garlic, and red pepper flakes. Cook for another 5 minutes.
Stir in soy sauce and season with salt and pepper.
Serve the stir-fry over cooked brown rice.
